Sardines and Eggplant Omelette (Torta)
Omelette is a very versatile dish that you can easily make for any meal. Try out this Sardines and Eggplant Omelette recipe and give your loved ones a delicious and healthier option for their usual Torta! In just 15 minutes, you can serve up to 7 pieces for you and the whole bunch.
Ingredients:
2 pcs, large Eggplant, boiled, peeled and chopped
1 can x 155g SABA Sardines in Tomato Sauce
1 pc Onion, chopped
1 pc Tomato, chopped
3 pcs Egg
¼ cup All Purpose flour
½ tsp Salt
¼ tsp Ground black pepper
½ cup Cooking Oil
Dipping Sauce (Optional)
2 Tbsp Soy Sauce
2 Tbsp Onion, chopped
1 pc Tomato, chopped
2 pcs Juice of Calamansi
Procedure:
- In a large bowl, combine all ingredients except cooking oil. Mix well.
- Heat oil in a flat pan at medium low heat. Scoop about 1/3 cup of the mixture, pour to the pan and cook for 1-2 minutes or until done, then flip to cook the other side. Cook for another 1-2 minutes. You may use an egg ring to shape the torta. Repeat procedure for the rest of the mixture.
- To make the dipping sauce, in a bowl, combine soy sauce, onion, tomato and calamansi juice. Mix well.
- Serve sardines and eggplant torta with the dipping sauce.
