Sardines Fritters
Here’s an easy dish to bring to your next potluck! Check out this Sardines Fritter Recipe good for up to 30 servings and you’ll definitely have a pretty fritter party!

Ingredients:
2 cups Cabbage, shredded
1Tbsp Rock Salt
1 can x 425g SABA Sardines in Tomato Sauce
2 pc Eggs
1 cup All Purpose Flour
¼ cup Cornstarch
1 pc Red Bell Pepper, finely chopped
2 pcs Medium Red Onion, finely chopped
3 Tbsp Green Onions, chopped
½ tsp Ground Black Pepper
Cooking oil for frying
Spiced Vinegar
¾ cups Water
¼ cup Cane Vinegar
2 Tbsp Brown Sugar
½ Tbsp Fish Sauce
½ tsp Iodized Salt
¼ tsp Ground Black Pepper
½ pc Onion, minced
1 clove Garlic, minced
1-2 pcs Siling labuyo, sliced
½ Tbsp Ginger, minced
Procedure:
1. Put cabbage in a bowl and sprinkle with rock salt. Let sit for 15 minutes to draw out the moisture. Afterwards, take a handful of the cabbage then squeeze out the moisture, do this for the rest of the cabbage. Set aside.
2. Open the can of SABA Sardines in Tomato Sauce and transfer the entire contents in a large bowl. Add squeezed cabbage, eggs, flour, bell pepper, onions and black pepper. Mix until well combined. (No salt was added since the cabbage is already salted).
3. In a fryer or large frying pan, put enough oil for deep drying. When the oil is hot enough, scoop about 2 Tbsp of the mixture and slide it to the oil. Fry until it floats and turns “golden orange”. Drain excess oil in paper towels. Repeat procedure for the rest of the mixture.
4. To make the spiced vinegar, combine all ingredients in a bowl and mix well.
5. Serve sardines fritters with the spiced vinegar.
